I find that sometimes if you blow carb cleaner thru a pilot system, it won't clear the block because, going from the rear of the carb to the tiny hole in the carb throat just on the inside side of the slide, the channel get smaller so you're blowing an obstruction down a narrowing tube. I suppose it depends on what kind of restoration you plan to do - if you are entering contours, or just making it pretty good, to please yourself.

Maybe the needle positions needs moved a notch ( carbs out job tho' - sorry) - do a plug chop at 1/4 -1/2 throttle open to see what the midrange mixture is looking like. I suppose you would stick it there because it was the right size. ( and you had a quirky sense of humour. I agree its probably to tidy up the head after removing the anti- smog/ US spec/ PAIRS paraphernalia that we don't need in the UK

A leak in the exhaust would cause a backfire on the over-run , not a backfire under load. Burnt valve seats would give low compression - worth checking that.

Backfiring sometimes is caused by a hole in the exhaust. Have a quick check there while engine idling. What kind of exhaust have you on it? If its a 4 into 4 you can put a hand on each pipe end while it backfires and see which cylinder is doing it.That might localise it to 1 cylinder. ( suggesting s...

At the bottom of the choke pickup pipe, there seems to be a small length of brass pipe with the tiny hole in the centre - probably a push fit into the pickup pipe. I guess it restricts flow.
