Or, you could get Maxton units custom made to suit. They do older style units that they can make the length you want with the benefits of custom adjustable damping, etc to suit your bike, your weight & use. Wouldn't imagine that would be any more expensive than a pair of off-the-shelf Ohlins or ...

I think if you remove the kickstart lever followed by the four screws securing the cover in place you might be able to draw out the shaft. The best thing to do is to put a straight edge across the rear sprocket & see how that sprocket aligns with the engine sprocket. That will tell you if & how much either sprocket may need spacing & which way.
This will be easier too without the chain being fitted.

Are 7mm and 5mm discs made from different material? If not, why shouldn't 7mm discs be ground to the smaller 5mm wear limit ? Potentially you could, but there might be issues regarding the hardening of the disc. I'm assuming the disc goes through some sort of heat treatment process to give the disc...

It will if, for example an inlet valve is open & he turns the exhaust camshaft. It's possible to open an exhaust valve onto an open inlet valve, or vice versa.
