From the factory both cams should be at 110 degree lobe centres so go with that if you want to keep it to std specs.
You can close up that figure to around 107/108 deg if you want to perk it up a bit.
Take the degree readings at 1mm lift.
It doesn't matter what valve clearance you use.

If using std studs, Just screw them in up to the shoulder, lightly nip them up with some Loctite applied. Stove enamelling won't effect it. Just thrash as normal. And if the paint is black the barrels will actually run up to 50 degs cooler than bare alloy anyway.
