You'll be fine with the two 7mm, from memory earlier Z1's were this anyway. It was only the introduction of the A4 which reduced to 5mm for (as you say) the unsprung weight.

Most people go powdercoat on the frame etc even though original finish was Paint. Powdercoat is much more durable but some powdercoaters lay it on to thick and it can look 'gloopy'.. Now't wrong with pattern parts, I think what pisses most of us off is bikes advertised as 'original' which are just built with pattern parts.
