The pin count is correct at 44, my theory is he got the exhaust cam position wrong initially and then set the inlet cam correctly (as in 44 pin count) but that then means both cams are out by 1 tooth which would screw it up somewhat. Exhaust cam looks to be one tooth retarded. That does look correct from that angle..
You just need to have the front (exhaust) cam mark to line up at TDC and check you have the correct amount of cam chain pins counted back to the dot on the inlet.

Electrode colour is heat range/cylinder temps and base ring is mixture. Dot 3 and 4 are basically the same but 4 has a higher temp rating.
There won't be any detectable functional difference between the two.
You could use dot 5 if all the brake system is fresh with no trace of old fluid as it is silicone based and cannot be mixed with the others.

Gs1000s 28mm carbs are a different design to the z1a carbs.
They are similar to the later Z1R 28mm carbs but have a superior pilot circuit with additional fuel mixture screw.
They will work with your 900 engine but will not be original in appearance.
