I think the tyres look a little worn otherwise seems fine.

But - I think the bike will run better with a petrol tank. More comfortable with a seat.

my advice to you is to get a workshop manual of the bike ( a 750 liquid cooled, 16 valves engine) and see how much parts you have and what parts are missing.
Make a list of the parts you need and start the "hunt".
Make sure that all the electronic parts are OK. I guess there are a lot of them on the bike.
If you can make the engine run, you know that you can start with the rest of the bike. Have a look at the brakes and at the tyres. Those may seem OK but if they're too old the rubber becomes hard and unsafe to ride.
If you really love your wife make sure that her bike is safe to ride !
By the way, the Yamaha you worked on is beautifull ! Congratulations.

Thanks mate we got one I’m going to start by stripping all down I’ve got a chap to fabricate the frame mock seat and foot pegs and new tank rebuild the engine from scratch and replace the electrical system with led lights digital switch gear (less wires) and get a new exhaust system cut and made it’s going to be a fun to build and hopefully she will love the end result if I’ll keep it lol
