Does anyone have tips on how best to restore original discs? I'm finding a reluctance to carry out work on old motorcycle discs although I have been told that some machining is possible.

Might be worth having a word with Dave at Z-Power, I think they have had the disc skimmed on the '72 Z1 they are currently restoring.

Zed discs are made from a grade of steel thats almost stainless, which makes them a bugger to machine down. The best bet is to have them ground down - any precision grinding shop should help.
