If there's scope to get them to around 270 ish or more do it.
Fresh cut valves and seats tend to initially "settle" a little so having plenty of shim is a good idea
Also the exhausts get a bit more hammer and with the heat that the heads and seats get they can wear quicker than the inlets.
I give them a 1000 miles to normalise and re-adjust if needed then they hardly ever need touching from one year to the next.
