Hi,
I’m rebuilding a US import GPZ1100B1 and I’ve just realised the Speedo only goes up to 85 !!!!
It’s an electronic speedo, not a cable one.
Anything I can do to make this more realistic ?

I suggest you find a UK speedometer and change the original US one. I have no experience with electronical speedometers but I think it's the only solution.

In the same position, been hunting for years for a UK one.
My understanding is the calibration is built into the speedo, it may have a 'pot' to adjust the calibration, whether there would be enough adjustment to read a higher mp/kph is debateable.
The only solution I can think of is obtain a Euro speedo and replace the clock face with a UK version. The euro versions come up occasionally on the bay usually from Germany.

Will Barber (Big Fluff on here) makes excellent Clock faces for most classic Zeds so might be worth a PM.
