Crap, I've forgotten to report any progress.
Didn't get much done during my vacation since I did some vacation-stuff (fishing, taking it easy, drinking healthy amounts of beer) instead of working on the project.
Yesterday though me and my dad machined up some spacers for the rear wheel along with a pipe to go inside the wheel between the bearings to support them.
Took some measurements for a good hour or so and double checked everything and then made a whole bunch of aluminium swarf.
End result? A perfectly fitted rear wheel that is completely centered.
After that we started figuring out the chain alignment a bit and as it turns out, a 520 offset sprocket I had for my GSX1100EF project was a straight fit with the correct offset. The problem? I ordered a 530 sprocket from Paul at Astralite so now I need to order a new 520 sprocket.
Benefits of this? A 520 pitch chain is waaaay thinner and leaves tons more room to the tire and to the frame.
I'll throw up some pictures later tonight.

Done!
Refurbished the fully floating disc that came with the rear wheel. The center for the disc was re-drilled a couple of times and looked terrible, plus it had a pretty big offset which we had no use for on this bike when using an old GSXR rear caliper. Gonna refurbish the buttons a bit then hit the center with the blaster and get it painted up.
Only a few hours of work so much better than paying £100-150 for a completely new disc.

And you did this with just a compass and scriber, I wouldnt have tried this without a Dividing Head, great work
Out of necessity I have also just bought a lathe, for all the bits n pieces that are needing to be machined, but I havent used a lathe in 35 years so its "slowly slowly catcha monkey"

Nah, I used a dividing head as well. Impossible to do this stuff without one. Even with the correct tools it's not 100%, but 98% is good enough for me.
As for the lathe... slow and steady. We've used this particular lathe for years so both me and my dad are pretty at home with it.

Serviced front forks over the weekend and filled them up with some oil today so I re-fit the whole front end and rolled the bike out of the garage to take a look at it from a few feet away.
Gotta say I'm pretty damn happy with the way it looks.
Need to finish up all the small stuff now then move on to the electrics.
Got to machine the rear sprocket down to fit a 520 chain as well.
